Here’s a Caramel Peanut Cracker (Peanut Brittle–Style Cracker Candy) recipe — sweet, crunchy, and super easy 🍯🥜

Caramel Peanut Cracker Candy

Ingredients

  • 20–24 saltine crackers (or graham crackers)
  • 1 cup (225 g) unsalted butter
  • 1 cup (200 g) brown sugar
  • 1 cup roasted peanuts (salted or unsalted)
  • ½ tsp vanilla extract
  • Optional: flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment or foil.
  3. Arrange crackers in a single layer.
  4. In a saucepan, melt butter and brown sugar.
  5. Bring to a boil and cook 2–3 minutes, stirring constantly.
  6. Remove from heat, stir in vanilla.
  7. Pour caramel evenly over crackers.
  8. Sprinkle peanuts on top, gently pressing them in.
  9. Bake 8–10 minutes until bubbly.
  10. Cool completely, then break into pieces.

Tips

  • Use salted crackers for sweet–salty balance.
  • Don’t overcook caramel or it will turn bitter.
  • For extra crunch, toast peanuts first.

Variations

  • Chocolate peanut cracker: sprinkle chocolate chips on hot caramel and spread
  • Honey peanut: replace half the brown sugar with honey
  • Spicy: add a pinch of cayenne to caramel
