Caramel Peanut Cracker Candy
Ingredients
- 20–24 saltine crackers (or graham crackers)
- 1 cup (225 g) unsalted butter
- 1 cup (200 g) brown sugar
- 1 cup roasted peanuts (salted or unsalted)
- ½ tsp vanilla extract
- Optional: flaky sea salt
Instructions
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment or foil.
- Arrange crackers in a single layer.
- In a saucepan, melt butter and brown sugar.
- Bring to a boil and cook 2–3 minutes, stirring constantly.
- Remove from heat, stir in vanilla.
- Pour caramel evenly over crackers.
- Sprinkle peanuts on top, gently pressing them in.
- Bake 8–10 minutes until bubbly.
- Cool completely, then break into pieces.
